Remove pan from heat once done stirring in eggs.
Add Remaining Ingredients: Now it’s time for flavor! Add 2 tablespoons of sesame oil (optional) and 3 tablespoons chopped green onions into your pot and stir until everything is combined. Taste and season with salt and pepper as needed.

- Ginger and scallion slices
- Bouillon cube or paste
- 2-3 eggs
- 2 tbsp corn starch
- Pinch of turmeric

Instructions
🥣 Bring 4 cups of water to boil. Add a few slices of fresh ginger and scallions as the water starts to heat up. Also stir in a bouillon cube or paste. Cover with lid.
🥣 Once the liquid is boiling, add in your Lucky Iron Fish or Leaf. No need to add any extra acidity here since there is already a broth base added. Cover with lid and allow it all to boil together for 10 minutes.
🥣 In the meantime, whisk 2-3 eggs in a bowl and set aside. In a separate bowl, add 2 tbsp of corn starch, a pinch of turmeric, some white pepper and salt.
🥣 After 10 minutes of boiling, scoop out the ginger, scallions and the Fish or Leaf from the iron-enriched broth. Turn heat low and continue simmering.
🥣 To the cornstarch mixture, add just enough water to cover it. Whisk it and pour the slurry into the pot. Stir until there are no lumps and you see the liquid start to thicken a bit.
🥣 Now add in the whisked eggs in a nice drizzle. You will see it starts to firm up in a few seconds. This is when you start stirring very gently to make sure heat is evenly distributed and the eggs cook evenly. Once you achieve the silky texture, turn heat off.
Within minutes the soup is now ready!
Add extra salt if needed. Serve with a drizzle of sesame oil.

- 1 large onion
- 1 cup chopped carrots
- 1 tbsp. neutral cooking oil
- 3 minced garlic cloves
- 2 tsp finely grated ginger
- 1-2 minced red chili peppers
- 1 tsp cumin

- 3/4 tsp cinnamon
- 3/4 tsp turmeric
- 1/4 tsp chili powder
- 2 tbsp. tomato paste
- 1-15oz can crushed tomatoes
- 4 cups low-sodium vegetable broth
- 1 cup red lentils
- 1 large sweet potato
- Lucky Iron Fish or Leaf
- Cauliflower florets from 1 head cauliflower
- 14oz can coconut milk
- 2 tbsp. lime juice
- 2 tsp lime zest
- Salt and black pepper to taste
DIRECTIONS
👉 Sauté 1 large onion (small dice) and 1 cup chopped carrot (medium dice) in oil on medium-high until onion starts to brown and stick to pan.
👉 Reduce heat and add garlic cloves and finely grated ginger. Add red chili peppers, cumin, coriander, cinnamon, turmeric and chili powder.
👉 Cook another 30 seconds until fragrant. Mix in 2 tbsp. tomato paste and sauté 30 seconds more while mixing.
👉 Then add canned crushed tomatoes and low-sodium vegetable broth. (Optional: blend until smooth before adding sweet potato and lentils.)
👉 Add red lentils and sweet potato (roughly chopped into slightly larger than bite sized pieces). Stir and bring to a boil.
👉 Once boiling, add the Lucky Iron Fish and continue boiling 10 minutes. Then remove the Fish and reduce heat and simmer, partially covered.
👉 Add bite-sized cauliflower florets from 1 head cauliflower and cook until cauliflower and sweet potato are just about fork tender.
👉 Stir in the can of coconut milk and heat gently until warmed through. Remove from heat and mix in lime juice and zest. This will help increase nutrient absorption! Add salt and black pepper to taste.

Drain the rice and add it to the iron-enriched liquid. Stir until the rice is fully cooked - almost mushy in texture.
Then, stir in the sweetener, cardamom powder, and any of the optional toppings and cook on low heat for another 5 minutes.
Once all the flavours are combined and the texture is only slightly runny, you can turn off the heat.

- 4 cups of broth
- 2 cups of sliced mushrooms
- ½ cup chopped carrots
- ½ cup chopped celery

Spice mix:
- 1 tsp of each: fresh or dried thyme + sage + rosemary
- 1 tsp of each: onion powder + garlic powder + cayenne pepper

- ½ cup flour
- 1 ½ cup plant-based milk

DIRECTIONS:
1️⃣ In a pot, add all the veggies and cook for a few minutes. Once fragrant, add the broth.

DIRECTIONS:
1️⃣ Melt coconut oil. In a mixing bowl, mix in the cauli florets, salt & pepper. Transfer to a parchment lined baking sheet. Roast 425·F until edges get brown & caramelized (⏰20-25 min).
2️⃣ In a large pot or dutch oven, heat oil on medium and sautée onions & leek till translucent (⏰5-7 min).
3️⃣ Mix in tomato paste, garlic, ginger, & the rest of seasonings until fragrant (⏰1 min).

Infuse your lentils with extra iron too! Just soak + boil them in iron water (water boiled with a few drops of citrus and the Lucky Iron Fish)!
INGREDIENTS:
- 1 cauliflower, chopped into florets
- 4 cloves of garlic
- 1 onion chopped
- 3 cups of veg. stock
- ⅓ cup cashews
- 1 bay leaf
- pinch of thyme + nutmeg
- 1 Lucky Iron Leaf or Lucky Iron Fish
DIRECTIONS:
1️⃣ Preheat the oven to 420·F. On a baking tray, place cauli florets, garlic cloves, onions, and drizzle with olive oil. Bake for ⏰25 minutes.
2️⃣ In a saucepan, bring the stock to a boil. Then add the bay leaf, cashews, lemon juice and your Lucky Iron Fish/ Leaf, and continue boiling for ⏰10 minutes.
3️⃣ Remove the bay leaf and the Fish/ Leaf. Simply wash the Fish/ Leaf with dish soap and water like you would any other cooking utensil. Thoroughly dry it.
4️⃣ Add the roasted cauli florets, nutmeg, thyme, and salt + pepper. Use a hand blender to blend the soup till it is a creamy consistency.
