Chicken Adobo

Our friend Joyce at the Joyce of Cooking shared a recipe she created that uses the Lucky Iron Fish to infuse iron into tasty traditional Filipino chicken dish.

MAKES 4 Servings |  PREP TIME 5 Min. | TOTAL TIME 25 Mins.


  • 1 TBSP oil
  • 8 pieces chicken thighs (bone in is best for flavour)
  • 4 cloves garlic (finely chopped)
  • 1 Inch size ginger grated
  • 1 large white onion (finely chopped)
  • 1/3 cup white vinegar
  • 2/3 cup light soy sauce
  • 1 bay leave
  • 1 tsp ground black pepper
  • 1 Lucky Iron Fish


  1. In your hot cast iron pan, add oil and chicken pieces and brown both sides (Set your heat to medium)
  2. Remove chicken from pan and add garlic, ginger and onion. Pan fry for 3 minutes and add chicken back into pan
  3. Add remaining ingredients into pan (Vinegar, soy sauce, bay leave and pepper)
  4. Add lucky iron fish into pan and set timer for 10 minutes
  5. After 10 minutes, remove the fish (Carefully with tongs since it will be very hot)
  6. Let the sauce simmer with the chicken for an additional 15 minutes with a lid until the sauce thickens up
  7. Remove bay leave and serve with rice
