All of out ideas for dinner? Look no further than last night’s leftovers. Fried Rice is a go-to meal for many because it’s so wildly simple. Just about any ingredient in this recipe is interchangeable. You can pick and choose what’s available in your fridge that day like chicken, tofu, or beef or pack it with all of the veggies that you like. Now that you're filled-in on this one-pan-wonder, you'll never need to order takeout again!

Makes 6 servings

Directions

3 cups of day old cooked Lucky Iron Fish Rice*

2 tablespoons sesame oil

2 cloves garlic, minced

1 small white onion, chopped

½ cup peas

½ cup carrots, finely diced

2-3 tablespoons reduced sodium soy sauce

2 eggs, lightly beaten (optional- if opting for non-vegan meal)

250 grams cooked protein - tofu to keep it vegan ( or chicken, beef or pork)

3 tablespoons chopped green onions (optional)

Instructions

  1. Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add garlic, white onion, peas and carrots and fry on low heat until tender, about 8-10 minutes.
  2. Push the onion, peas and carrots to the side of the pan.
    ➡️ For cooking with eggs, pour the beaten eggs onto the other side. Using a spatula, scramble the eggs.
    ➡️ Once cooked, mix the eggs with the vegetable mix.
  3. Add the rice and cooked protein to the veggie mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
  4. Top with chopped green onions if desired.

*Please note: To help ensure leftover rice is safe to use, do not let rice sit at room temperature after boiling. Store leftover rice in the refrigerator soon after cooking.
