🚨ANOTHER KID-FRIENDLY RECIPE🚨
It doesn't get cheddar than this! This cheesy, vegan, iron-enriched dish is amazing, especially if your little ones will only eat pasta! ⠀

INGREDIENTS:⠀

➡️ Roux:⠀
2 tablespoons vegan butter or margarine⠀
1 medium yellow onion, diced⠀
2 tbsp. flour⠀
salt + pepper, to taste⠀
2 tsp garlic powder⠀
1 tsp paprika⠀
1 tsp mustard powder⠀
2 cups unsweetened nut milk (we used almond)⠀
⠀
➡️ Pasta & Sauce:⠀
1 cup nutritional yeast⠀
4 cups pasta⠀
4 cups water⠀
1 Lucky Iron Fish⠀
⠀
DIRECTIONS:⠀
⠀
Bring the 4 cups of water to a boil. Add salt, 2-3 drops of lemon juice, and the Lucky Iron Fish. Continue boiling for 10 minutes. ⠀

Then remove the Lucky Iron Fish and add in the pasta. Cook for 1 min. less than what the package instructs. When you drain the pasta, save the water! We will be using it.⠀

In the meantime, melt the vegan butter/ margarine on medium heat in another pot. Add chopped onions and cook for a few minutes. ⠀

Sprinkle in the flour and add the remaining roux ingredients. Stir until combined. Then add the nut milk and continue stirring so no lumps are formed.⠀

Once a paste-like consistency is achieved, add the nutritional yeast. Stir until fully combined. ⠀
⠀
Add the drained pasta along with 1 cup of the pasta water we saved. Let the pasta cook for another minute. The vegan cheesy sauce should cling to the pasta. ⠀

If the sauce needs to be thinned down or if the pasta is still too chewy, add some more of the pasta water and cook for a bit longer. ⠀
